What would a Christmas lunch be without, what is for many, the main event at the main event; roast potatoes. When everyone sits down for lunch on Christmas day these will certainly take centre stage. Thanks to Paul & Steven for the perfect roast potatoes.
- Duck or goose fat
- Salt & Pepper
Begin by melting duck or goose fat in a pan. Add to this, crushed garlic gloves, thyme sprigs. Take a moment to enjoy this smell before preparing the potatoes for the oven. Potato prep’ begins with peeling and chopping to your preferred roast potato size.
Add the potatoes to salted water and simmer until part cooked. You should be able to pass a knife through until you feel the centre is still firm. They are now ready to drain. The outer of each potato will start to get a little bashed as they have softened, this is right and will give you a great crunch once roasted.
In a lined baking tray, tip the potatoes and spoon on some of the melted fat. Add salt and pepper and put them in the oven. Be sure to turn the potatoes half way through cooking to stop them sticking. Finish in the oven until crispy, serve and watch the family enjoy a true taste sensation.
