Readily available in supermarkets, mulled wine is sold by the bottle. However, make it yourself and the flavour, sweetness and quality is in your hands. If you have never made your own mulled wine before, then Christmas 2016 just had an upgrade because we’re going to show you how to do it yourself. Knowsley Hall, Executive Chef Paul Macnish has provided his recipe for mulled wine below, but you can take this and make it your own. Making it yourself gives you the control over the flavours and sweetness so try a batch and experiment with taste. Paul’s top tip is to remember, the aromats’ you are using for mulled wine are good for the night. Simply top up with wine to make more, you don’t need to start from scratch with new ingredients when you are running low.
- 1 bottle of vino (red)
- 2 star anise
- 1 cinnamon stick
- 2 cloves
- 1 cup of sugar (to taste)
- Peel and juice of one orange
- 1 dried chilli (if you like chilli)
Prepare yourself, this might get complicated…place all ingredients into a pan and gently simmer for 15 minutes, then allow to infuse off heat for a further 30 minutes. Top up when necessary and repeat the heating process.
