Bread sauce, is not to be forgotten at your Christmas lunch. Its benefits are beyond the big day itself because bread sauce is your secret weapon for making the best left over Boxing day sandwiches ever. As well as being a tasty accompaniment to your Christmas lunch, bread sauce is the butter for your sandwiches the next day. Like cranberry sauce, this is another really easy recipe and you’ll find it is better than a packet or jar if you prepare your own.
- I onion
- 4 cloves
- 2 bay leafs
- ¼ teaspoon nutmeg
- 700ml milk
- 2-3 cups panko crumb (can be any crumb, fresh or dried)
Peel an onion and stud with cloves.
Place the studded onion in pan with milk, bay leafs and nutmeg. Simmer for 15 minutes, then let to infuse for a further 15 minutes off the heat.
Strain liquid into clean pan, whisk/stir in bread crumbs along with salt and white pepper to tasteSimmer for further 2 minutes and allow to rest off heat. This can be made several days before use, just needs loosening up from fridge on the day… I serve warm, not hot.
